Restaurant Bougainville is a destination unto itself and offers the finest, unique and sensory gastronomic experience – and this experience all starts with personal attention, an elegant setting and a panoramic view of Amsterdam’s city centre.

Be prepared to find world-class gastronomy by Signature Chef Pascal Jalhay and sous-chef Tim Golsteijn. Jalhay is seen as one of the most innovative chefs of his generation. His former restaurant “Vermeer” was awarded two Michelin stars in less than two years, making him the youngest chef in the country to receive this honor. 

Our à la carte menu provides you with a fine dining experience, where characteristic, worldly and beautiful dishes will be served made with only the best, fresh ingredients. The menu is carefully curated by Pascal Jalhay and mostly influenced by the Peruvian and Chilean cuisine. Restaurant Bougainville is open for breakfast, lunch, dinner, and 24-hour in-suite dining. The restaurant also includes an exclusive and intimate chef’s table which seats a maximum of 14 people.
